Velveting A Chicken

 

 

To velvet your chicken you will need, chicken, water, Cornstarch and ginger/onion oil (recipe on Firebird Chicken & Noodles page). Mix all liquids with chicken and massage until absorbed. Add cornstarch, mix again and allow to marinade for about ten to fifteen minutes. It's then ready to cook.
