Comfort Moco

Most people that have visited Hawaii are familiar with its famous Loco Moco and know it as a comfort food. Let's mix all the others together into one.

 

 

Ingredients:

2 cups fried rice (click here for recipe)

1 Longganisa link

1 Slice Maple flavored Sausage patty

1 Hamburger patty

1 Small Onion sliced

¼ cup Mexican Four Cheese

- Enough Mushroom Gravy to cover

1-2 Eggs for frying

Directions:

- Cook all meats ahead of time and set aside.

- Cut onion into thin sliced appx ½” long.

- Using the large holes of a box grater, grate 2-4 potatos and place in a bowl. Pour water over potatos until

  covered and let soak for about 5 to 10 minutes. This will prevent discoloration and help remove the starch. Pour water and potatoes through a strainer or colander. Wrap potatoes in a paper towel and squeeze as much water as possible from them. Mix with onion and set aside.

​- Follow directions below for homemade gravy or directions on package of mix. ​When gravy is done, set aside on low heat.

​- Cut Longganisa link in half lengthwise and then repeat on each of those halves. Cut all four halves into

  small pieces.  

 - Put butter in pan on medium-high heat and once melted spread potatoes in pan. Cook until brown on

  one side, then add Longganisa, mix together and finish cooking. Transfer to serving plate.

- Next, place hamburger and sausage patties on potato mixture.

​- Cook over easy (or sunny side up) egg on medium low heat. Take your time, be patient and egg will

  come out perfect.

​- Sprinkle cheddar cheese on onion, sausages and potatoes. Pour gravy over all.

​- When egg(s) is done, place on top of gravy and enjoy.

*White Gravy

 Ingredients:

- 3 tablespoons butter

- 3 tablespoons flour

- Baby Bella Mushroom slices (optional)

- 1 cup milk plus 1-2 optional tablespoons (depending on your —preference of thicker or thinner gravy)

- salt and pepper (to taste)

Directions:

- In small saucepan, melt butter.

- Once butter is melted, add the flour and whisk. It will look like the consistency of wet sand.

- Slowly add the milk, and whisk to incorporate. Whisk until smooth.

- Add mushroom slices (optional)

- Gravy will thicken, add in the additional milk if you want a thinner gravy.

- Add salt and pepper to taste.
