Fil-Am Longganisa Soup

 

 

This is a sweet and spicy soup of my own creation with a mixture of Philippine and Thai seasonings. It is sweet and spicy with Filipino Longganisa

(sweet sausage) providing the flavor base.

Ingredients:

4 cups water

4 links Longganisa sausage (1 link per person)

3 Tbsp soy sauce

1 Tbsp sweet soy sauce

1 tsp fish sauce

¼ cup sugar

½ tsp granulated garlic powder

½ tsp granulated onion powder

½ tsp Ajinomoto (optional)

 2 cups Cabbage *(don’t toss the core away)

1 cup Bok choy

½ cup Onions

½ cup Carrots

½ cup Broccoli florets

½ cup sliced Mushrooms in each bowl

½ cup Corn

 -  Kale to taste

 

 

Directions:

1. Prepare  2 cup soup bowls by adding mushrooms

    In each, then broccoli and finally Kale (optional)

1. Cook Longganisa according to directions on package

      - Slice cooked sausage in half lengthwise, then slice each of

         those halves in half lengthwise again. Cut each slice into

         four pieces.

2. Add Longganisa to water and bring to a boil.

3. Add seasonings in order – sugar, garlic powder, onion powder,

    soy sauce, sweet soy sauce, fish sauce, Ajinomoto (optional), stir

    until incorporated.

4. Add the rest of vegetables one at a time allowing soup to come to

    a boil a few times to enhance flavor – carrots, onions, cabbage,

    bok choy and corn.

5. Pour or ladle mixture over mushrooms, broccoli and kale.

6. Serve with a smile.

 

 

*Trim dried “bark” off exposed end of core. Slice core into thin slices and put them in soup when you start to heat the water.
