My wife (Din) did this one. It's considered the unofficial dish of the Philippines and is a

 
comfort food usually made for dinner and characterized by its savory and sour flavor.
 

Ingredients:

- 3 cups water

- 5-6 colossal Shrimp

- 4 scallions

- 1 medium tomato (diced)

- 3 Chinese spinach

- 1 Jalapeño Pepper

- 2 Chinese Radish (may substitute Turnip)

- 1 Tbsp Tamarind past

- 1 Tbsp salt

- 1 ½ tsp Ajinomoto  

- 1 tsp Better Than Bouillon Fish Base

 

Directions:

1. Prep Work

    Cut scallions into ½” pieces

    Cut tomatoes into medium dice

    Remove stem from Jalapeño and cut in half

    Remove leaves of Chinese Spinach and cut stems into 1” pieces

    Remove shells from shrimp and devein if necessary

2. Place water in a pot, add all ingredients except spinach and shrimp and bring to boil.

3. Once water is boiling add Chinese Spinach and shrimp and boil for 5 minutes.

4. Remove from heat, plate and enjoy.
