Kalbi Beef Stir-Fry

This recipe is a combination of the seasonings for

Kalbi Beef and the method of stir-frying.

Amount of vegetables is a matter of choice,

some people like more and some less.

 

 

 

 

Ingredients:

1 to 1 ½ lb Stir-fry beef strips (I use Walmart Stir-fry beef)

1 cup Bok Choy (baby bok choy is best)

½ medium sweet onion (sliced)

½ cup carrots (cut on bias)

1 cup broccoli florets

1½ cups cabbage (sliced about 1” X ½”X 2" strips)

1½ cups Baby Bella Mushrooms

 

Marinade:

 ½ Asian (Korean/bosc) pear (grated)

½ cup Soy sauce

1 Tbsp Oyster sauce

1 tsp Fish sauce

½ cup Mirin

¼ cup Garlic (minced)

¼ cup Onion (small chop)

¼ cup Sugar

¼ cup Sambal Oelek

 

Velveting the beef

Separate beef strips and place in a bowl

Mix about 3 Tbsp water and 1 Tbsp corn starch in small cup

Pour mix over beef and massage with hands. (liquid should barely coat beef)

Place in refrigerator and allow to sit for 25 – 30 min.

Remove from bowl and rinse in colander.

 

I use a one gallon zip lock plastic bag for marinade.

- Remove seeds and grate pear, skin and all.

- Combine all marinade ingredients and mix.

- Place velveted beef strips in bag and mix thoroughly.

- Place marinade in refrigerator for minimum of 4 hours to three days.

 

Directions:

1. Heat a wok or skillet with 2 tbsp canola oil on high heat

2. Separate beef from marinade and place in hot wok

3. Fry beef until about ¾ done and remove from wok and lower heat to med-high

4. Add vegetables one at a time( in order below) to wok stirring constantly

       -onions, carrots, bok choy, cabbage, broccoli, mushrooms

5. Add beef to vegetables

6. Pour desired amount of marinade over all and cook about three minutes

7. Remove, place in bowls or plates and serve.
