A TASTE OF THE ISLANDS
Hawaiian/Asian Fusion

Korean Corn Cheese
This is a variation of a recipe I saw on Diners, Drive-ins and Dives.
Ingredients:
- 2 Cups Frozen Corn
- ½ Small Yellow Onion (small dice)
- 3 Tbs Mayonnaise
- 1 Tbs sugar
- ½ tsp salt
- 1 tsp White Pepper
- Grated Parmesan Cheese (to taste)
- ¼ cup Grated Mexican Four Cheese
- 1 Tbs Gochujang
- 2 Tbs Unsalted butter
Directions:
- In a medium bowl, put corn, onion, Mayonnaise, sugar, salt, white pepper, Mexican Four cheese and Gochujang (if using) and mix well. Place small saute pan on medium heat and add butter. Once butter is melted add corn mixture to pan and mix again. Smooth the top and sprinkle Parmesan Cheese on top. (I personally believe more is better)
- At this time you can cover pan until cheese is melted* or place in broiler until cheese is melted and
slightly brown.
* I heat mixture until hot enough for cheese to be melting. I then use a culinary torch to brown cheese.
Serve while dish is still hot and bubbling. Your guests will love it.
